GAPS (Honey) Apple Pie


Sugar Free (Honey) Apple Pie Filling

10 - 12 small to medium apples (Pealed and sliced) I used Granny Smith and I cut them in chunks but it doesn't matter.
2-3 T Butter
1/3 -1/2 C Honey - I eye balled it.  It doesn't hurt to have a bit more.
1 t cinnamon
1/8 t nutmeg

Peal the apples and slice or cut into small chunks. 
Melt butter in a skillet and add the honey on low.  Honey burns quickly.  Then add the apples and cook them for 15-20 min to soften them.  I had to use 2 skillets b/c I didn't have enough space in the first one.  I may have added a bit more butter due to the 2 skillet issue. Towards the end I added the cinnamon and nutmeg.  Then I poured it into the almond flour crust, you could use any crust you want. 
Finally I topped it with a crumb topping.  This is optional.  It didn't need it but it looked kind of weird without a top to it.  It is almost impossible to make a almond flour crust for the top so that is why I had to do the crumb topping.  It would also taste good with no crust at all. 

Crumb topping:
·         1 cups almond flour - you could use regular flour
·         6 tablespoons unsalted butter, room temperature (mine was cold and I broke it up into pieces with a fork. 
·         1/4 honey
·         1/4 teaspoon salt
Make crumb topping: In a medium bowl, combine 1 cup flour, butter, honey (I drizzled it), and 1/4 teaspoon salt. I stirred it with fork until it all mixed but didn't get too gooey; freeze(I didn't do this but my butter was still cold) I sprinkled it on the pie. 

Elana's Pantry Pie Crust
1 1/2 C almond flour
1/4 t. salt
1/4 t. baking soda
1/4 C oil
2 T honey
1t. vanilla
Mix all ingredients in mixer.  Spray pie pan with oil.  Press dough into pie pan. Bake 350 deg. for 10 min.  Add filling and bake for 10 more min.

Carrot Apple Raisin Bread - GAPS Legal / Paleo Legal

Carrot Apple Raisin Bread - GAPS Legal / Paleo Legal
2 C almond flour
1/2 t sea salt
1/2 t baking soda
1 t ground cinnamon
1/4 C grape seed oil (i use sun flour or coconut oil)
1/2 C honey or agave - I try to lessen this to 1/3 and next time will try 1/4 it was good with 1/3
2 large eggs
1 C grated carrot - sometimes I use Zucchini
1 grated apple
1/2 C raisins or dried currants
1/2 C chopped nuts (optional) I usually leave these out.

Mix everything together except the fruit and carrots.  Then mix in the final items.
bake in a bread pan.  350 deg. for 50-60 min.  If you have 1 loaf it will need more time. If you have 2 smaller loafs it works better and 45-50 min is plenty of time.

Ingredients:
2T Butter - or coconut oil
1/2 C raw honey
pinch of salt
1C peanuts ( whole or lightly chopped)
1/2 C walnuts (lightly chopped)
1/2 C pepitas (raw pumpkin seeds)
1/2 C almonds (sliced or chopped)
1/4 C flax seeds (milled)
1/2 C sun flour seeds
1 C dried fruit (chopped dates, apricots, or raisins)

Melt the butter with the honey and salt.  Mix in the nuts, seeds, and fruit.  Spread parchment paper onto a cookie sheet or in a 9x13 dish.  Bake 30 min. at 300 deg. 
Cook them then cut into bars.  Hint: if you keep them in the freezer they will maintain their shape, but cut them first.  If you like a more crunchy bar, then bake at a slightly higher temp.  Watch closely because honey tends to burn quickly.  One time I left them in for too long and they looked totally burned.  After taking them out the burned looking parts didn't really taste burned and it ended up holding together very nicely. 


Broccoli Cheese Chicken Casserole - GAPS Legal/Paleo Legal/Dairy Free

Broccoli Cheese Chicken Casserole - GAPS Legal/Paleo Legal/Dairy Free
Ingredients:
1 head cauliflower grated in food processor to be the size of rice
1 lb broccoli steamed and chopped into small pieces if you like it that way - My family likes it this way!
1 1/2 C cooked chopped or shredded Chicken
1/2 C-1 C Chicken Broth
1/3 C almond flour
5 eggs beaten
1/2 C Cream or coconut yogurt
1 C milk - you choose what kind (I used coconut milk)
2-3 t black pepper
1/2 t salt
2 t Dijon mustard
8 oz cheddar cheese (or goat cheese)

Directions:
Grate the cauliflower in food processor and place in greased 9x13 dish.
Steam and chop broccoli and add to dish.
Add chopped chicken to dish and mix all together.
pour chicken broth over the top
Sprinkle cheese to cover the top of the casserole.
Mix together the flour, eggs, cream, milk salt mustard. 
Pour evenly over the top.  Let sit so that the mixture has time to get into the nooks and crannies. 
Bake for 25 -40 min or until set.  Once the top has browned you may want to tent with aluminum foil to keep from burning. 

Dairy-Free Ranch Dressing - GAPS/Paleo Legal

Dairy-Free Ranch Dressing - GAPS/Paleo Legal
1 1/2 tsp lemon juice plus enough unsweetened coconut or almond milk to make 1/4 C
1 C mayo - April - Spectrum has a canola mayo that has no sugar.  I use this for the ranch dressing so that it will last longer. 
1/2 tsp parsley
1/2 tsp dill
1/4 tsp garlic powder
1/8 tsp salt or more to taste
dash onion powder
dash pepper
Combine lemon juice and milk and allow to sit until the milk is curdled, about 5 minutes.  Whisk in the remaining ingredients and chill until serving.
